Transfiguration Grape Galette and Other Fruit Goodies

Traditionally, grapes and other first fruits from summer, are blessed on the Feast of the Transfiguration. An easy way to commemorate this feast at home is to serve fruit in some way. A few low energy ideas are fruit kabobs, fruit salad, fruit with dip, fruit smoothies, frozen fruit ice lollies, etc…  If you have more time one your hands, a fruit cobbler, crumble, or pie is glorious for this summer feast, especially when crowned with a frosty scoop of ice cream. About half way in between the two ends of the spectrum is the rustic grape galette we make for the day. Don’t let the French spook you – it’s just a lazy pie! Seriously, it’s super simple!

Transfiguration Grape Galette

 

Preheat oven to 375* F

Ingredients:

1 Frozen Pie Crust

1 Bunch Red Grapes

1 tsp Lemon Zest

1 TBS Lemon Juice

1 TBS Cornstarch

1 TBS Granulated or Turbinado Sugar

 

Roll out pie crust onto chosen baking pan. Mix all remaining ingredients in a bowl. Empty the bowl’s contents onto the middle of the pie crust and fold up edges about 1/2 inch. Bake for at least 25 minutes until crust is golden brown. Y’all enjoy!
